Invent your own Sausage

There are lots of sausages of different sorts in the market but do you have a favourite? And if you had the chance to invent one of your own say with 2 or 3 things in it what would they be?
I think my favourite sausage is a Toulouse sausage overall. My choice in making up a sausage would be a pork with cauliflower cheese sausage! It might be nice you never know biggrin Mind you it might be bloody awful!

Our local butcher used to make the most fabulous Tomato sausages....yummmy!
sadly I'm the only one in the family that likes sausages much...still on the plus side more for me lol
If I made one, it would have to have a bit of heat and spice....maybe tomato and chilli.

I think I'd enjoy a pork and apple sausage.

I got rid of my sausage maker, and now want it back sad
Fave sausages are Tomato chutney ones, or something like that.
If I could invent one, it would be a Thai green curry sausage
