The plain fact is that people, couples especially, generally need more notice than a few hours purely for practical reasons, and often longer than that if they wish to "check you out" via email etc. for safety and security reasons.
Even if they don't have babysitting needs, many people make advance arrangements to do something on a Saturday evening, rather than stay in and watch Casualty.
You seem a very pleasant and attractive couple, I'm sure you'll get lucky very soon.
York's a lovely place - and given its bad luck with flooding in the last few years, I can quite understand why you've taken up kayaking
