The Cafe Lunchtime 'Specials'

I was going to make a fired egg sarny for my lunch (it tends to have a breakfasty feel if I have not had breakfast)... but then I remembered I had some lovely mushrooms. Now mushrooms in and egg sarny are nice but it does tend to fall to bits or you have mushrooms popping out with every bit. So I decided to make an omelette (just for a change). But then mushroom omelette sounded a bit plain - so I added a few things.
My lunchtime 'special' for the menu today is...
Le Polo Omlette: Mushroom omelette with melted chunks of Red Leicester cheese, chopped cherry tomatoes, slices of Brock Wurst sausage and a hint of seasoning.
What will you be putting on the 'specials board' for today?
Just finished the last of last nights home made Madras.
Exclusion zone now in operation - anyone in Northampton stay clear!

Not sure what I'm having yet or when. Trouble with working nights is my body clock is so all over the place, I don't know anymore if this is lunchtime, brekkie or supper dunno Now I just eat when I feel hungry

I would recommend brunch. Most of us know what it is. Its great as it allows late comers the chance of a meal. It can run for a few hours. It uses up left overs. It makes only 2 meals in a day, and reduces the size of the second meal. Theoretically..............

A quick dressing for the pasta of your choice. Crumble up a young sharp cheese; Lancashire is best but that immature supermarket apology for Cheshire would work too and mix it with a handful of crushed walnut pieces. Stir into hot drained pasta with black pepper and/or nutmeg. The feature of this is the contrast between the crunchy nuts and the melting cheese but it can be enhanced with chopped spring onion. I often stir in minced basil and chilli freshly picked from the greenhouse.
Chicken salad sandwich on brown bread, touch of mayo xx

the question is tho......to re-heat or not to reheat?

In answer to your question - I would normally reply "Why would I want anything to do with soggy prawn crackers?". But seeing as it's you I'm willing to play along. wink
My answer would be: I would put them in the oven for a little while to remove some of the moisture. Alternatively you could use The Selective Transformed InfraRed (STIR) drying process. biggrin

Cook up some spaghetti.
Caramelise a medium sized chopped union
Add spaghetti to the frying onions and fry until it starts to go a little crunchy
Whip 2 eggs and add to pan and stir into the mix
Sprinkle with bread crumbs
Serve with lashings of ketchup

the crackers went in the oven... delish

Not to be influenced by PL's culinary treat...
My omlette consists of...
3 medium eggs
Grated mature cheese
Half teaspoon of hot pepper sauce
Chopped red or green pepper
Butter to taste...
1st melt butter in frying pan - always use non-stick
Whip the eggs & hot pepper sauce to a bubbly consistency... not as per meringue mix :giggle:
Pour the mix into the hot frying pan before the butter burns... as this will affect the taste.
cook evenly on one side.
Before the mixture fully cooks all the way thru flip the omlette over with a spatula
Add grated cheese & chopped peppers according to taste & continue frying for about half minute... or check the underside for a light golden colour
This way the peppers stay nice n crunchy biggrin
Immediately fold the omlette into a roll... garnish with more chopped peppers & if you like more cheese & enjoy :thumbup:

Today’s lunchtime special is…
Pan fried tiger prawns and spring onion with a sprinkling of lemongrass and black pepper - stirred in to some noodles with a splash of soy sauce.
Total preparation and cooking time 5 minutes – with a yum factor of 9 biggrin
I'll let you know what's on the menu when I get back from shopping. It's like Mother Hubbard's cupboard in here confused
